In Chile, Foraging the Future

*** Chilean cuisine has a history of misinterpretation. It has never had the reputation of say, Peru, even though southern Peru and northern Chile share a similar topography and cultural background. In Santiago and Valparaiso, the most often referred to foods are from fuentes de soda, snack bars basically, where you’re likely to find steak sandwiches or the chorrillana, a greasy mess of chopped beef, French fries, eggs, and onions.
